Buffalo Popcorn

On Sunday when I was home alone not watching the Superbowl I decided I wanted some popcorn.  But I wanted to do something different with it.  I thought some how making buffalo sauce on popcorn would be delicious.  I browsed the web but there aren't too many options.  I did however find a recipe that I followed mostly.  They added chips and peanuts but I only had popcorn.

Buffalo Popcorn and Strawberry Blueberry Smoothie


Buffalo Popcorn     


3 quarts popped Popcorn
2 cups Corn Chips, slightly broken
1 cup Peanuts
1/4 cup Butter or Margarine
2 Tbsp. Louisiana-Style Hot Sauce
1 tsp. Celery Seed
Salt

Combine remaining popcorn with corn chips and peanuts. In small saucepan, melt butter or margarine with hot sauce, celery seed and salt. Pour over popcorn mixture, tossing gently to coat. Spread on l5x10-inch baking sheet. Bake at 350 degrees Fahrenheit for 10 minutes. Remove from baking sheet to large serving bowl. Toss with remaining 2 cups popped corn. Serve immediately or store in airtight container.

Oh as suggested in another version of buffalo popcorn I found I left out a couple of cups of popcorn so it could be plain.  I think this helped especially since I didn't add the chips or peanuts.  Also I didn't add any celery seed.

So basically it was just popcorn, butter, franks red hot, and a little salt.  It was delicious.  I sprinkled most of it on the popcorn that wasnt set aside and mixed it all up.  Then I baked it.  Then I combined the unbuffaloed popcorn with the popcorn from the oven which crisped back  up after being soaked in buffalo sauce.  I sprinkled a little more buff sauce on top of it all and then ate up! Yum yum! :)

Pizza! Frozen to be exact, buffalo chicken to be even more exact. :)


Yum yum!  I've been pretty lazy with my cooking since Mr. B's been away for work.  I picked up this frozen pizza at the supermarket today because I know Mr. B doesn't like buffalo chicken pizza and since he wasn't around I thought I'd try it out for myself.  And I thought it was delicious!  So delicious I burn the roof of my mouth even tho I waited three min after I took it out of the oven.  Hehe oh well, it was worth it.  Mr B's and I usually get market basket bake and rise frozen pizza.  Its  quick and delicious.  It has a nice crust that puffs up while it bakes. Mystic Pizza's Buffalo chicken pizza didn't puff up as much.  It's an accurate depiction of the crust in the above picture.  But it was very good. The crust had a nice crunch to it but the dough it self still had some bite.  The buffalo sauce was tangy and yummy.  Not too hot but still had a good kick to it. The chicken itself was good too.  I sometime get scared of chicken in products like this but it was pretty good quality. :)

I did enjoy it very much as a quick dinner for one.  It's good enough for dinner for two with maybe a salad on the side to healthify it up a little bit.  :)  Anyway I give it an A-.  It would have been an A+ if only it was made with Frank's Red hot.   That stuff if just the best.   hehe

We went to Mystic Conn. on our way back from our Honeymoonette.  I took a picture of Mystic Pizza even though we didn't even go in or get any pizza.  hehe

Deliciousness

 It's hot.  It's spicy.  It's creamy.  It's cheesy.  It's delicious.  What is it do you ask?  Buffalo Chicken Dip.  It's a mixture of chicken, cream cheese, shredded cheese, and Frank's red hot sauce.

Buffalo Chicken Dip


I was introduced to it during a trip to the land of the best pizza and wings I've ever had-- upstate NY.  After we had stuffed ourselves with the pizza and wings out came the chicken wing dip.  And it was love at first taste.  I've been making it ever since.  It's always a huge hit.   You should go make some now as a matter of fact! :)  I usually have it with some tortilla chips and/or carrots.  

Here's how I make it.

What you'll need (ingredients):

1 8 oz package of cream cheese.
1 large can of chicken (10.5 oz)
A bag of shredded cheese (usually a cheddar/mozzeralla mix but if only have one or the other it still comes out great)
Hot sauce to taste. ( I use about a half a cup)

Directions:
Drain the chicken.
Mix everything together.
Put it in the oven or crock pot until hot.
Serve with tortilla chips, carrots, celery, or whatever you like.

You can enjoy your buffalo chicken dip in many other ways too.

I've made buffalo chicken pasta with the leftovers before which was amazing!  I just boiled up some pasta and frozen veggies, drain when done and mixed in some left over dip.  Yum yum!

I've also had friends put some on their burgers as a topping, or just smeared some on a piece of bread.

It's just so versatile!  I've even made it when camping.  I put it in a tin pan an heated it up on the camp fire.  It  added a nice smokey hint. to the dip.
